to you.
At Moonstruck, we manage our bee colonies using thoughtful, hands-on beekeeping practices designed to protect the health of the hives while producing the highest quality honey possible. Our honey harvest takes place in Mountain Brook, AL after the big spring nectar flow.
A Careful, Hands-On Approach
We take great care throughout the entire harvesting process. Every step is performed by hand to ensure the integrity of the honey and minimize stress on the bees. During harvest:
Bees are gently removed from the frames
We leave them plenty of honey for the health of the hive
Honey supers are transported from the field to our honey house for extraction where they are first dried to achieve proper moisture content
We do not use any heat during extraction and bottling, including in uncapping honey frames. Instead, we rely on roller uncappers that lightly open the wax cells while preserving as much of the wax on the combs as possible.
Minimal Processing
After uncapping, the honey is extracted using a radial extractor that spins the frames to remove the honey from the comb. Once extracted:
Any hive debris is removed
The honey is only coarsely filtered
All natural character and beneficial properties are preserved
Our honey is always stored at controlled room temperature to preserve quality and flavor.
